Three Simple Ways to Preserve Your Tomato Harvest Bi-Product

Last year we processed over 1,200 lbs. of tomatoes out of our garden, producing a significant quantity of Bi-Product.
This tomato bi-product still has a lot of rich tomato flavor, and I wanted to find a way to use it.
After experimenting, I found a few delicious ways to use this tomato Bi-product which you can incorporate into your spice cabinet.
If you want to make your life easier when canning and preserving, I recommend using a Kitchen Aid. I use the Vegetable Strainer attachment to make fresh tomato sauce when processing my harvest.
When using a Kitchen Aid, the bi-product of tomatoes when saucing is the pulp, seeds, and skin.
Most people throw this mess out.

Meat Rub
Place the tomato bi-product onto dehydrator trays. Don’t smash the pulp logs. If you don’t have a dehydrator, you can do this in an oven on parchment paper on a baking tray.
Dehydrating is a slow moisture removal, so you want to set the temperature low, 200–250 degrees.
Dehydrating in a dehydrator takes about 4–6 hours. In the oven, it will take half that time.
Add peppers or onions to dehydrate with the tomato logs.
Dehydrate until the pulp is crispy.
